FILLED CRUNCHY DATE CUPS

This recipe will make about 12 cups. INGREDIENTS: Date cups: 400 g dates 2,5 dl cornflakes 30 Almonds 3 tbsp coconut oil 3 tbsp unsweeted cacao powder 3 tbsp syrup 1 tbsp peanut butter (optional) Ideas for filling & decoration: Mango yogurt - find it here. Fresh berries Chopped almonds Roasted coconut flakes Dark chocolate Equipment: Muffinform and muffin papers. Foodprocessor INSTRUCTIONS: 1. Blend almonds and cornflakes in the foodprocessor for about 1 minute. 2. Remove the date seeds and put them into the foodprocessor together with the rest of the ingredients.
3. Form 12 pieces of date cups in the muffinform covered with muffinpaper. 4. Store them in the fridge for at least one hour - or in the freezer for 30 minutes. 5. When finnished, fill them with yogurt topped with berries, nuts and chocolate. The date cups remain fresh for 3 days in the fridge. ENJOY! //Anita & Tobias
