SPAGHETTI WITH RED PEPPER DRESSING & TOPPING

A simple and delicious meal that you can enjoy for lunch or dinner. What makes this recipe phenomenal is the amazing-roasted-red-pepper-dressing! We used some alternative ''spaghetti with seaweed'' but feel free to use ordinary spaghetti or fresh pasta. The topping can easily be replaced with your favourite veggies.

This recipe serves 2-3 persons.
INGREDIENTS: .
250 g spaghetti or fresh pasta (if you use fresh pasta it will be 500 g)
Dressing: 3 large red peppers
2 dl chopped sun dried tomatoes
2 dl plantmilk (we used unsweeted soymilk)
1 dl fresh parsley
6 tbsp ketchup
2 tbsp smoked paprika
2 tsp chilipowder
1-2 cloves of garlic
Juice from one lemon Equipment: foodprocessor or hand blender

Avocado Chopped spinach Fresh parsley INSTRUCTIONS:
1. Preheat the oven to 180 degrees celsius. 2. Start with the tofu-bites. Find the recipe here. 3. Cut the red peppers in slices and grill them in the oven for about 15-20 minutes. 4. Boil water for the pasta 5. Put the roasted red peppers and the rest of the ingredients for the dressing in a foodprocessor. Blend until even. You can warm it up or eat it cold. 6.
